Well, this isn't the kind of preservation that you had in mind, but a friend of mine once made 5 gallons of rosehip mead. It was the most incredible mead I ever tasted.
Personally, I think it preserved quite nicely. :-D
I've heard of it as an infusion, but that's it. Like rosehip lotion.
